Sometimes, one of the big high street chains ticks the box - you know what you're getting, the service is quick, you just want to drink and dash. Sometimes, you want to spend a little more time relishing the experience, chatting with friends over a homemade tray bake and a cup of tea in a bone china cup.And sometimes, you stumble on a place that is like nothing you have experienced before, where time ceases to matter at all, and you fully immerse yourself in something completely new and utterly compelling. Proudfoot & Co in Winchester is just such a place. Hidden up a cobbled side street, opposite a beautiful price of street art by Winchester's own Banksy, Hendog, this stylish lounge transports you to a bygone era, using ancient recipes and foraged ingredients to create a range of delicious non-alcoholic drinks, which change with the seasons. Owner Eoghan Proudfoot is passionate about sustainability, sourcing almost all his ingredients locally and foraging every day; a passion he shares with others on regular foraging courses. He keeps his own bees, taps local trees for syrups - which makes the best 'maple syrup' I have ever tasted - and has, until recently, roasted and milled cob nuts collected from one of the last cob nut farmers in Britain to create the most delicious nut butter. Using hundreds of ancient recipe books, Eoghan has rediscovered forgotten methods of brewing and production and is very happy to talk you through his methods and let you sample the results. You can try that remarkable five-year syrup or nut butter, sip fruity cordials, and taste morsels of light as air fennel biscuits or crispy-round-the-edges squidgy malt loaf. Foraged ingredients are displayed around the bar in elegant glass jars, for you to study while you choose your drink.
