Meatloaf is probably one of the most midwestern comfort meals you will ever find
and so, being a Kansas girl, I have definitely had my fair share. My biggest complaint
that typically comes with meatloaf is dryness, however, this meatloaf from
Eat Like a Gilmore has a nice thick tomato-y sauce to it that helps keep that complaint at bay.

RECIPE:

Ingredients:
.
2 Tbsp butter
1 cup grated yellow onion
3 minced garlic cloves
1/3 cup tomato sauce
1 Tbsp balsamic vinegar
1 Tbsp hot sauce
1 egg
1 pound lean ground beef
1/3 cup finely grated medium cheddar cheese
2/3 cup Panko bread crumbs
1 tsp dried parsley
1 tsp Kosher salt
1 tsp black pepper

Steps:

1.) Place oven rack in center position and preheat oven to 350 degrees F.

2.) Take out one 8 1/2 x 4 1/2 inch meatloaf pan and set aside.

3.) In a frying pan, over medium heat, melt butter.
.
4.) Once fully melted, add grated onion and garlic. Sauté for 4-5 minutes, until
most of the water has evaporated. Remove from heat and bring to room temperature.

5.) In a small bowl, combine tomato sauce, balsalmic vinegar, and hot sauce.
Stir until blended. Set aside.

6.) In a large mixing bowl, mix egg until yolk and white are combined.

7.) Add ground beef, cheese, panko, parsley, salt, pepper, and the mixed sauce.

8.) Use hands to mix ingredients together. Add onions and garlic and use hands to
mix until all ingredients are fully combined.

9.) Form meatloaf into an oblong ball. Place it into the pan and press it so there
are no air bubbles at the bottom of the pan and the top of the meatloaf is flat.

10.) Place in oven and bake for 60 minutes. Insert a meat thermometer around
the 55 minute mark to test doneness. Meatloaf is done when the inside temperature
reaches 160 degrees F.

11.) Remove from oven and let cool for 10 minutes. Slice into 1-inch slabs. Serve.
