During Maine's short summer season there is no shortage of edibles from the land. Late July brings those delectable wild Maine blueberries, small with flavor that bursts in the mouth.

Blueberries and peaches are a winning combination, and at this house nothing beats a cobbler with both as ingredients. Always I rely on the recipe taught me many years ago by a neighbor. It is so simple and any fruit or a combination can be used. Best of all it is absolutely failsafe.
Fruit Cobbler
4 cups of desired fruit
3 T. Granulated sugar
1 t. Lemon juice
1 t. Cornstarch or tapioca
Combine all ingredients and place in a baking dish or pie plate.
To the blueberry/peach combo I added a tablespoon of finely chopped basil which was a last minute thought that provided a nice flavor.
For the topping, combine 1 cup flour, 1 cup granulated sugar, 1/2 cup brown sugar and 1/2 t cinnamon. Add 1 egg and mix with a fork until all ingredients are blended and slightly moistened. Sprinkle on top of the fruit mixture and dot with butter. Bake at 350 until the topping is a crispy brown, about 40 minutes.
Topped with a generous scoop of vanilla ice cream, the cobbler is a great addition to any meal and there're not likely to be any leftovers. The problem is keeping sneaky hands from it until time to serve. My intention was to photo the finished product, but someone, maybe more than one, got into it before that happened. You see I wasn't kidding about it being a house favorite!
